This week is Nationwide Vegetarian Week and whereas I’m not a full veggie, I do make a concentrated effort to eat a minimum of 3 – 4 meat-free meals per week to get a vitamin boost.
Listed here are a few of my favorite veggie meals, plus inspiration for some new ones I’m going to be attempting out this week:
